We harvested the fruit in 2023 and took our time to ferment and age the wines over twenty seven months. This 100% Chardonnay sparkling follows the traditional Methode Champenoise indicating that the secondary fermentation happens in the bottle. This SUPER dry, delightful sparkler bursts its bubbles in celebration of whatever the night brings. No oak was injured in the making of this wine.
The '1971' is a dedication to Don and Mary, Mummy and Daddy, in this the year of their 50th anniversary. Happy Anniversary (55) 12 bottle cases produced.
