On the vine, Pinot Gris is dark purple in color leading one to believe it produces a red wine. It is really quite versatile and can show different nuances depending on fermentation and skin contact. The Symposium rosé is 100% Pinot Gris. We cold soak the purple grapes to extract the pigment of the skins thus making a pale pink wine. This dry rosé pairs with every season. 40 cases produced. This wine is dedicated to all of the people behind the curtain. This world is filled with angels and all those in this 'Symposium' have helped me incredibly over the years.
